Get Your Iron Fix with These 5 Dry Fruits Recipes

 1. Beetroot-Dry Fruit Ladoo

 

Ingredients:

  • 2 cup grated beetroot
  • 1/2 cup of mixed dry fruits (walnuts, almonds, dates)
  • 2 tbsp milk
  • 1/2 cup ghee
  • 1 cup powdered coconut

Instructions:

  • Heat ghee in a pan.
  • Add the dates mixture.
  • Add sautéed beetroot and powdered nuts.
  • Mix well.
  • Let it cool and roll it into small balls.
  • Garnish with powdered coconut and serve.

 

 

2. Sautéed Broccoli with Peanut Sauce

 

Ingredients:

  • 8 cups broccoli florets (2-inch pieces)
  • 2 tbsp olive oil
  • 1 cup sliced red bell pepper
  • ½ cup sliced onion
  • 3 garlic cloves, chopped
  • 3 tbsp peanut butter
  • 2 tbsp rice vinegar
  • 1 tsp cornstarch

Instructions:

  • Steam broccoli for 3-4 min.
  • Sauté bell pepper, onion, and garlic in olive oil.
  • Add broccoli, and cook for 3 min.
  • Whisk peanut butter, rice vinegar, and cornstarch in a small bowl until smooth.
  • Stir this sauce into vegetables, and cook until thickened.
  • And voila! Your Sautéed Broccoli with Peanut Sauce is ready!

 

 3. Chocolate-Covered Dates

 

Ingredients:

  • 12 pitted dates
  • 3 tbsp creamy peanut butter
  • 4 ounces dark chocolate, chopped

Instructions:

  • Fill dates with peanut butter.
  • Melt dark chocolate in the microwave.
  • Insert dates in skewers and dip them in chocolate.
  • Place it on a wax paper-lined sheet, and remove the skewer.
  • Refrigerate until chocolate sets, and then savour the irresistible taste!

 

 4. Pistachio and Date Crostini

 

Ingredients:

  • 18 slices of brown bread
  • 2 tbsp olive oil
  • 1/8 tsp + 1/4 tsp salt
  • 4 oz softened cream cheese
  • 3 tbsp honey
  • 4 tsp grated lemon zest
  • 10 pitted dates, chopped
  • 1/2 cup chopped pistachios

Instructions:

  • Preheat oven to 400°F (200°C). Place bread slices on the baking sheet.
  • Brush bread tops with olive oil and sprinkle with salt. Bake for 12-15

minutes. Cool on sheet.

  • In a food processor, blend cream cheese, honey, lemon zest, and salt.
  • Spread this mixture over bread slices.
  • Top with chopped dates and pistachios.
  • Drizzle honey and sprinkle some lemon zest.
  • Serve these delicious appetizers at your next gathering!

 

 5. Crunchy Pomegranate Parfait

 

Ingredients

  • 1 cup Greek yoghurt
  • ⅓ cup homemade granola
  • 2-3 tbsp pomegranate
  • 2-3 tbsp cashews, pumpkin seeds, and raisins
  • Dash of cinnamon

Instructions

  • Layer yoghurt, granola and pomegranate in a bowl/jar.
  • Repeat the layers.
  • Top with more pomegranates, cashews, and raisins. Sprinkle pumpkin seeds.
  • Enjoy this treat as a refreshing breakfast or a delightful dessert.
